Pat the chops dry with a paper towel. Sprinkle the paprika, oregano, salt, and pepper over both sides. Rub the spices into the pork.
Heat on HIGH a large cast-iron skillet. Brown the chops for 2–3 minutes on each side. Then take the pan off the heat. Mix the melted butter with the garlic, mustard, and thyme leaves. Stir well.
Drizzle the butter mixture over the browned pork chops and return the pan to the oven for 10–15 minutes. Take the chops out. Drizzle the butter over them again then let rest for 5 minutes before serving.
Notes
Dry the chop with a paper towel before seasoning so the spices adhere better.
Let the pork chops sit with the spice rub for an hour.
